Summer Quinoa Salad
Ingredients
200g cooked quinoa - cooked in vegetable stock.
2tbs butter or nuttelex
1/2 cup pitted olives
rind of 1/4 lemon, chopped
4tbs chopped parsley
4tbs chopped corriander
handful chopped cooked green beans
handful slivered pistaschios
400ml vegtable stock
mixed lettuce leaves

Directions
1. Bring stock to the boil, cook the quinoa in the stock. Drain the quinoa and place quinoa in a large bowl, then add butter then mix til the butter melts in.
2. Let it sit for 15 minutes, then mix in all the remaining ingredients. Serve
