Cooked Zucchini Salad
Ingredients
- 3 zucchinis sliced finely
- 60g of cold pressed olive oil
- 2 greens of spring onion
- 30mls of lime juice
- 1 teaspoon of lime peel grated
- 1/2 bunch of basil leaves
- 10mls of maple syrup
- 1/2 teaspoon of Himalayan salt
- 1/4 teaspoon of black pepper
- 1/2 cup walnuts to top

Directions
1. Add oil to frypan and warm up.
2. Add zucchini and spring onion - stir fry til cooked through. If thicker can cook by browning each side.
3. Add the basil leaves.
4. Separately mix lime and lime juice, maple syrup, salt and pepper. To serve pour dressing on and add walnuts on top.
5. Enjoy. Can be served with rice, meat or fish dish.
