Devikirin's Ginger Cookies - GF, Vegan
Ingredients
- 2 1/2 cups of flour ( 1/3 rice flour, 1/3 potato flour or buckwheat flour, 1/3 lupin flour)
- 1 tspn gluten free baking powder
- 1 tspn bi carb soda
- 1 tspn ground Himalyan salt
- 3/4 cup maple syrup
- 1/4 cup black strap molasses
- 1/2 cup of rice bran oil or melted coconut oil
- 5 tblspns of freshly grated ginger root
- LOVE
1. Mix all dried ingredients and wet ingredients ( including ginger) separately
Add together and mix lightly
2. Allow to stand for 15-20 minutes
3. Preheat oven to 180 degrees C. Scoop out heaped teaspoons and roll into balls. Place on lined or greased ( note do not grease with butter if vegan) tray. Bake for 12-15 minutes
4. Allow to cool lightly before placing them on a wire rack to completely cool.
