Gluten Free Meat Loaf
Ingredients
- 2 eggs
- 1.5 kg preservative free mince meat
- 4 slices of gluten free bread
- Half bunch of parsley
- 2 celery sticks
- One zucchini
- 2 cloves of garlic
- 2 red chillies
- one teaspoon of fennel seed
- 2 cups of gluten free cornflakes
Directions
I roughly cut up everything and separated it into two. I minced it all up together except for the cornflakes in the thermomix. With a mortar and pestle I crushed the cornflakes. Once the meat loaf mixture is mixed up I combined it all and shipped it into a loaf like shape. I coated it with the cornflakes and cooked it for 60 minutes in the oven on 200 degrees Celsius. You can use for lunches or serve like a roast with gluten free gravy and vegies. Great variety and easy to do for kids lunches. We served it with roast pumpkin, steamed green beans and broccoli.
