Nori Rice Balls - Gluten free, Dairy Free, Vegan
Ingredients:
- 2 cups of gluten free sushi rice
- 2- 3 sheets of Nori
- 2 1/2 tablespoons of seseame seeds
- 1 tablespoon of nigella seed
- 1 teaspoon of finely grated ginger
- one avocado
- 1/2 continental cucumber
- one small red capsicum
- 3 spring onions ( not if fructose sensitive)
- 200g of cooked and cold salmon sliced up finely
- serve with tamari
Directions
1. Rinse rice in a sieve and cook in 2 cups of filtered water for 20 minutes. Cover the pan tightly once cooked and let the water soak into the rice. Let the rice cool to room temperature.
2. Tear up nori sheets and put in the nutribullet and blend til fine powder. Stir the sesame seeds, nigella seeds and nori in to the cooled rice.
3. Grate the ginger, Cut up finely the avocado, cucumber, capsicum, onion, salmon and mix in separate bowl together.
4. I lay some rice mixture in my palm of my hand and pattered it til flat. I placed a small amount of vegetable/salmon mixture on top. Then I put some more rice mixture on top and rolled it into a ball. Place the ball on serving plate. Serve with tamari if needed.
