Summer Quinoa Salad
Ingredients
- 200g cooked quinoa - cooked in vegetable stock.
 - 2tbs butter or nuttelex
 - 1/2 cup pitted olives
 - rind of 1/4 lemon, chopped
 - 4tbs chopped parsley
 - 4tbs chopped corriander
 - handful chopped cooked green beans
 - handful chopped walnuts
 - 400ml vegtable stock
 - mixed lettuce leaves
 - optional to add goats feta
 
Directions
1. Bring stock to the boil, cook the quinoa in the stock. Drain the quinoa and place quinoa in a large bowl, then add butter then mix til the butter melts in.
2. Let it sit for 15 minutes, then mix in all the remaining ingredients. Serve
