Zucchini and Chia Seed Loaf - GF, DF
Ingredients
- 6 eggs - lightly beaten
- 2 teaspoons of Apple cider vinegar
- 2-3 zucchini grated ( 300g)
- 1 cup of arrowroot flour
- 2 cups of almond or hazelnut flour
- 1 teaspoon gluten-free baking powder
- 1/2 teaspoon celtic salt
- 1/2 cup chia seed
- Optional 1/4 cup olives chopped
- Sprinkle with sesame seeds

Directions
Put the oven to 160 degree celcius. Combine eggs, apple cider and zucchinis in a bowl. In a separate bowl combine arrowroot , nut flour, baking powder, salt and chia seeds. Mix the wet and dry mixtures. Add olives if you choose. Pour into a greased loaf tin and sprinkle with sesame seeds. Bake for one hour or until golden. test if cooked with a skewer. Can be stored in an airtight container for up to 5 days.
Serve with butter or goats cheese. Some people like it toasted or warm.
